Restaurant Simplexit\u00e9 (favorite)<\/h3>\n\n<p class=\"wp-block-paragraph\">Nestled at 102 rue Saint-Martin, in a quiet street just a stone&#8217;s throw from the center of Caen, Restaurant Simplexit\u00e9 is, in our opinion, one of the city&#8217;s finest bistronomic addresses. Helmed by chef Maxime Le Gallo, who has also worked at Ch\u00e2teau d&#8217;Audrieu and Manoir du Lys, we were treated to a contemporary cuisine featuring local Normandy produce. We had an excellent time there, and the table convinced us from the very first bite.<\/p>\n\n<figure class=\"wp-block-image size-large\"><img decoding=\"async\" src=\"https:\/\/photos.smugmug.com\/Normandie-Lovers\/Caen\/Restaurants\/n-qvh8fG\/Simplexit&#xE9;\/i-DgCd3Mz\/0\/NF95mmmv9rnFq8DsVKQrqSb2C48bSjWV24dpDqNLD\/L\/restaurant-simplexite-caen-2-L.jpg\" alt=\"Restaurant interior\"\/><\/figure>\n\n<p class=\"wp-block-paragraph\">The principle is simple: a daily menu renewed according to new arrivals, but prepared with bistronomic precision. On this particular day, the starter was a combination of oyster, egg and asparagus &#8211; a classic seasonal trio treated with restraint and precision. The dish, a low-temperature braised pork chop, was a perfect illustration of the company&#8217;s philosophy: masterful cooking, carefully chosen accompaniments &#8211; turnip mousse, beet, radish icicle &#8211; and a pork jus that tied everything together with precision. Dessert was a light affair, with quartered strawberries, stewed rhubarb, cr\u00eape dentelle and honey espuma bringing the meal to a gentle close.<\/p>\n\n<p class=\"wp-block-paragraph\">The setting is intimate and a little removed from the hustle and bustle of the center. Restaurant Fragments (unfortunately closed, replaced by l&#8217;Assiette au beurre)<\/h3>\n\n<p class=\"wp-block-paragraph\">One of our old favorites in Caen sadly closed its doors recently. The quality of a gourmet and organic restaurant, that&#8217;s what this fine establishment in the historic heart of Caen offered. The menu was designed around local products with 2 mottos: 100% organic and 100% artisanal. A lively, original and refined cuisine characterized this warm and elegant place, which we particularly appreciated during our visit to Caen. Chef St\u00e9phane Carbone and his brigade are busy in the kitchen of this beautiful establishment, which has been awarded Michelin stars for 10 years until 2019. In fact, you&#8217;ll have the privilege of admiring the team at work behind the glass door of the kitchen. The menu is varied, designed around the riches of Normandy&#8217;s terroir.
