We liked it:<\/p>\n\n<ul class=\"wp-block-list\">\n<li>The <strong>mix of influences<\/strong> in the plate, which tints the classics of French gastronomy with a touch of elsewhere. The beef tartar with oysters will be accompanied by the Japanese mizuna salad with grilled rice. You can feel all the <strong>creativity of the chef<\/strong>, balanced between <strong>local products<\/strong> and <strong>influences from other continents<\/strong>.<\/p>\n\n<figure class=\"wp-block-image size-large\"><img decoding=\"async\" src=\"https:\/\/photos.smugmug.com\/Travel\/Normandie\/Honfleur-Hotels-restaurants\/i-jNCQf6F\/1\/766f51e5\/L\/Honfleur_restaurant_Fleur_Sel_amuse_plat-1-L.jpg\" alt=\"Photo of the main course\"\/><figcaption class=\"wp-element-caption\">Saddle of Lamb with Garlic Pistou<\/figcaption><\/figure>\n\n<p>The cuisine is <strong>sweet<\/strong>, <strong>light<\/strong>, <strong>spicy<\/strong> with accuracy, <strong>wrapped in<\/strong> juice prepared with care &#8230; And yet on the menu, you will find grilled farm pig, saddle of lamb or hot foie gras!  <\/p>\n\n<p>But the chef&#8217;s talent is to bring a note of <strong>citrus<\/strong> (foie gras, pancakes and lemongrass juice), a <strong>spicy<\/strong> flavor (saddle of lamb, chickpeas and carrots with cumin) or to work the dessert into a subtle<em> <\/em><strong>sweet cloud<\/strong> (Greek yogurt with honey, fig and rosemary compote and roasted pollen).<\/p>\n\n<figure class=\"wp-block-image size-large\"><img decoding=\"async\" src=\"https:\/\/photos.smugmug.com\/Travel\/Normandie\/Honfleur-Hotels-restaurants\/i-SBZJ7WT\/1\/b8d3d757\/L\/Honfleur_restaurant_Fleur_Sel_dessert-1-L.jpg\" alt=\"photo of the dessert\"\/><figcaption class=\"wp-element-caption\">Greek yogurt cloud with honey<\/figcaption><\/figure>\n\n<p>A true <strong>impressionist cuisine<\/strong> that plays with <strong>contrasts<\/strong> and is really worth a visit! A special mention for the <strong>Cuv\u00e9e du Papy<\/strong> en Saint Jospeh, an excellent tasting memory a few years ago.<\/p>\n\n<figure class=\"wp-block-image size-large\"><img decoding=\"async\" src=\"https:\/\/photos.smugmug.com\/Vallee-loire\/Vin-loire-vignobles\/i-sQ2FvH2\/1\/c90c634b\/L\/vignoble_loire-L.jpg\" alt=\"Photo of vines\"\/><\/figure>\n\n<p>In white, it is on the side of Burgundy which will have to go to seek the beautiful bottles, like this <strong>Saint Aubin<sup>1er<\/sup> cru <\/strong>of Olivier Leflaive. Who has not seen the mist rising over the charming village of Saint Aubin while tasting one of its unique wines, does not know Burgundy&#8230;<\/p>\n\n<p>Also noteworthy is the possibility of ordering some exceptional bottles, available only <strong>under allocation<\/strong>.<\/p>\n\n<h3 class=\"wp-block-heading\">The atmosphere of the restaurant<\/h3>\n\n<p>The restaurant La Fleur de Sel is located in a small street, 2 steps from the Old Port and the Place Sainte Catherine with its famous wooden church, in <strong>one of the most charming streets<\/strong> of Honfleur.<\/p>\n\n<figure class=\"wp-block-image size-large\"><img decoding=\"async\" src=\"https:\/\/photos.smugmug.com\/Travel\/Normandie\/Honfleur-Hotels-restaurants\/i-XDNmKM4\/1\/9f6f43e3\/L\/Honfleur_restaurant_Fleur_Sel_Salle-1-L.jpg\" alt=\"Photo of the restaurant room\"\/><figcaption class=\"wp-element-caption\">The room of the Fleur de Sel restaurant<\/figcaption><\/figure>\n\n<p>The atmosphere is <strong>hushed<\/strong> but not stuffy. In this old house of the old Honfleur, the <strong>beams<\/strong> are visible, the ground in tomette, but we particularly appreciated the luminous environment very well thought which modernizes the unit.<\/p>\n\n<p>On the table, just like in the kitchen, we mix influences, from the dishes with Asian reflections, to the leather placemat and the velvet benches!<\/p>\n\n<div
